I made some great Hushpuppies last night, thought i would share. 

1 cup of yellow cornmeal
1 cup of all purpose flour
1 1/4 tsp baking powder
1/4 tsp salt
1/2 cup sugar
2 eggs (beaten)
1 large onion
1/4 cup milk
frying oil of choice

mix all well roll dough in small balls  fry to golden brown.

*you can use self rising flour and omit baking powder and salt

next time I am going to try them seasoned with a little old bay

I went by your recipe exactly except I used buttermilk,

and I added a tiny bit of red pepper flakes,

black pepper,

 

and a dash of Soul Seasoning or Cajun Seasoning

 

At this point I have also drained a whole can of yellow sweet corn and added that to the batter

 

 

LOL I am so used to shaping my meatballs a certain size that I ended up with the worlds largest hushpuppies pahahah

make sure you let them cook through.. hushpuppies are bad to be done on outside and not in very center.. .. get your oil temp right.. if it is too hot turn it down and add a little more oil to cool it fast..

I fried up some catfish to go with them.. yum

 

they are awesome with fried trout as well.. =)
