PUMPKIN WALNUT COOKIES

1/2 cup butter

1 1/2 cup brown sugar, packed

2 large eggs

1 cup cooked or canned pumpkin

1 tsp vanilla

1 tsp grated lemon peel

1 tsp lemon juice

2 1/2 cups sifted all purpose flour

3 tsp baking powder

1 tsp salt

1 1/2 tsp pumpkin pie spice

1/4 tsp ginger

1 cup coarsely chopped walnuts

Cream butter and sugar together till fluffy. beat in eggs one at a time. stir in pumpkin vanilla lemon peel and juice.

resift flour with baking powder, salt and spice

blend in butter mixture and stir in walnuts.

drop by tbsp onto greased baking sheets

2 inches apart

bake at 375 12-14 minutes

makes about 2 1/2 dozen 3 inch cookies.

To decorate: Spread cookies with a vanilla buttercream frosting and make “face” with walnut pieces and candy corn if desire.
