SERENA’S 1 SKILLET SCALLOPED POTATOES & CHICKEN

You will need:

5-6 thawed chicken thighs (skinless & boneless)

Tbsp Grape Seed oil

Spices:

Paprika, Salt, Black Pepper, Cumin (Whole), Italian Seasoning, hint of Lemon Pepper, Poultry Seasoning, Garlic Powder, Onion Powder, hint of Toney’s Creole Seasoning.

2 to 3 boxes of scalloped potatoes. (yes you can mix it up with au gratin too)

(Today I just have a double box of Betty Crocker scalloped potatoes, so do as box says and have 2 cups hot water ready, and add both packets of cheese to the hot water. Also you will need 1 1/3 cup milk) Note: I add a splash more milk

4 tbsp butter

Preheat oven to 425

Take your chicken and, use a knife or kitchen sheers and cut your chicken thighs into smaller pieces.

Add a little Grape Seed Oil (or whatever you have, I like grape seed because it is good with high heat.) to your 10 inch cast iron skillet.

Add your chicken, turn on heat and start seasoning well with the seasonings listed above as you lightly brown it for a few minutes. You wanna do both sides. It will smell amazing.

Now pour your dried potato slices over top the chicken. Pour cheese packets into the 2 cups of hot water and pour directly over potatoes in the skillet. Next add in the 1 1/3 cups milk. Put 4 Tbsp of butter on top

I like to take a fork and press my potatoes down in the liquid so they will be soft while baking.. at this point I add a little more milk just to make sure the potatoes are not sticking out.

Put the skillet in the oven and set timer for 45 minutes.

Take out carefully when timer is up. I now add a drop of milk in the center (like 1/4 cup) and I add a handful of shredded cheddar cheese to the top while it is hot and bubbly and let it just melt on its own while it sits there and cools.

Meanwhile I heat some green beans with salt and butter to serve with my meal. It’s honestly all you need. Easy, Cheap (if you already have all your Seasonings) and delicious! One Pan!

Enjoy!
