SERENA’S ALICE SPRINGS CHICKEN – TATER TOT CASSEROLE

So I love making my version of Outback’s Alice Spring Chicken.. but this time I did a little twist on it and I tell ya it was a hit … so good

I had some boneless skinless chicken thighs that I salted and peppered well with a tiny bit of garlic powder and put into my dutch oven to brown along with my 1lb of bacon that I cut up with kitchen sheers.

preheat oven to 400 degrees

I put the rest of my bacon in a cast iron to finish cooking till crispy and I poured a Cherry Sprite (its all I had, supposed to use Mountain Dew) over my chicken, added a little more pepper and put the lid on and put into the oven for 50 minutes. This brings it out super tender and moist.

Meanwhile I continue to cook my bacon until it is crisp then turn off stove eye and tilt pan so bacon grease isn’t on my bacon.

I also take a whole bag of tater tots and put into my air fryer to get good and crispy.. at least 18 minutes I think it was.. just push French fry button lol!

Once my chicken comes out I take my chicken and put it all around the bottom of my casserole dish.

I take a good Honey Mustard and put it heavily over top of my chicken.

Then I take a small block of Swiss cheese and shred it over top of my chicken.

Then place the tater tots over top of that evenly

add a little shredded cheddar cheese and last your crisp bacon

turn oven to broil and put into oven.

I just let it stay long enough for the cheese to melt. you have to watch it..

take out and serve with green beans.

delicious! It was really a good one. everyone loved it. They will come back for seconds.
