LINDA’S SUGAR CRINKLES

1 Cup Crisco shortening

1 1/2 cups granulated sugar

2 large eggs

1 tsp lemon extract

1 tsp vanilla extract

2 1/2 cups all purpose flour

2 tsp baking powder

1/4 tsp salt

1/4 cup granulated sugar

Beat Crisco and sugar at medium speed till fluffy

adding eggs one at a time beating till well blended

Combine flour baking powder and salt, gradually adding to shortening mixture beating well

shape into 1 inch balls

roll balls in 1/4 cup sugar

place balls, sugar side up on ungreased nonstick baking sheet

don’t over crowd. Bake at 350 degrees 8 minutes till barely golden.

don’t overbake.

remove from cookie sheet and place on cooling rack. Cool completely before storing.

Yields 6 dozen cookies and this recipe can be made in double batches.
