SERENA’S  ROASTED GARDEN CASSEROLE


(NOTE: cut evenly in size so will cook evenly )

Potatoes (not sure how many maybe 6 large)

1 Small yellow squash

1 Small to medium zucchini

Spices:


 

(didn’t measure)

about 2 Tbsp granulated Sugar

maybe a Tbsp of basil

salt and pepper well

shake of garlic powder lightly

small amount maybe 1/4 tsp if that much of chili powder

just a light shake of crushed red pepper flakes not much or you will have it too spicy.

mix all together with hands in large bowl adding extra virgin olive oil or veg oil if you don’t have it.

using your already greasy hands, grease a large cookie sheet.

pour your seasoned veggies onto the cookie sheet and spread out evenly.

Put into a preheated oven at 475 degrees and set timer for 45 minutes.

take out 10 minutes before done and sprinkle with salt lightly.

at this point I put in a nice casserole dish if  having guests or a simple 9×11 cake pan like today for when it is just us.. sprinkle a whole bag of mozzarella cheese over top and put in oven at BROIL.. watch it.. don’t let cheese burn.. but it will melt..

 

take out and serve immediately with your steak, venison, chicken or pork.. goes well with all meats.. YUM. I am serving mine today with country fried venison steaks.
