“Garlic Grits Casserole”

1 cup quick cooking grits
4 1/2 cups boiling water
1 tsp salt
10 oz Boursin herb and garlic cheese
1/4 cup butter
2 eggs
1/2 c half and half

1 cup Panko breadcrumbs
1/4 cup melted butter

Preheat oven to 350 degrees. Grease a 9 X 12 casserole dish.
Cook grits in boiling water with the salt until thickened, about 5 minutes. Add cheese and butter and stir until melted. Beat eggs and half and half together, and slowly add to grits mixture. Pour into prepared casserole. Mix melted butter with Panko and sprinkle over the top of the grits. Bake 45 minutes. Makes 8 to 10 servings.
