ANTIQUE CAKE – COONTOWN CAKE is the name posted in the book.

 

CAKE 

2 eggs

3/4 cup brown sugar

1/2 cup sour milk

1/2 cup butter

1/2 cup molasses

3/4 cup currants or raisins

1 tsp baking soda

1 tsp mixed spices (allspice)

2 cups flour, rounded

Bake in 2 layers. (or one long pan with filling on top then chocolate then walnuts) 

Filling

Chopped dates cooked in a little water

Put cake together filling in middle and ice with chocolate icing and walnuts on top

Chocolate Fudge Icing 

1/2 tbsp butter

1/3 cup cocoa

1 cup brown sugar

1 tsp gelatine

1/4 cup corn syrup

few grains of salt

1/4 cup milk

1/2 tsp vanilla

Melt butter, add cocoa, brown sugar, corn syrup, salt milk and one tsp gelatin soaked in 1 tbsp water.

Heat to the boiling point and boil about 5 minutes

remove from fire and beat till creamy

add vanilla if you have some and pour over cake .
