Ok so this pie is different from any you have ever had.. some love it.. some don’t. It has a very delicate unique taste. My kids absolutely loved this pie, BUT.. my husband didn’t care for it at all.. so you may just have to try it for yourself and decide.

Yellow Squash Pie or  “SQUAPPLE PIE”


1 c. evaporated skim milk

2 eggs

1/2 c. honey or 1 cup sugar (I used sugar today)

1 tsp. cinnamon

4 c. cooked yellow squash

1 unbaked pie shell

4 tbsp self rising flour

1/2 tsp salt

1/2 cup chunky applesauce

tab butter

 

Cube and cook yellow squash in small amount of water until tender; drain and cool.

In blender, blend milk, eggs, cinnamon and sugar and butter. Add 4 tbsp self rising flour, 1/2 tsp salt Blend together well

after all those additions you will mix well in blender till smooth

add in 1/2 cup of chunky applesauce and pulse (mixes it just till incorporated without blending it)

get your pie shell ready..

Pour into unbaked pie shell. Bake at 400 degrees for 10 minutes, then 350 degrees for 35 more minutes or until set.

Cool, then refrigerate until COLD ( the longer it sets in the fridge the better it is.. next day would be ideal  but if you can’t wait that long,let it set up in fridge at least 2-3 hours before eating)

Slice and enjoy..
