No evaporated milk? .. substitute regular milk by reducing on stove

with a little time, though, you can easily reduce a quantity of regular milk by half or more. Put it in a pan on the stove, bring it to a simmer, and let it reduce. A wide-mouth pan will allow more surface area for faster evaporation. Keep the milk below the boil, to keep it from curdling, and make sure it doesn’t scorch on the bottom of the pan, or you’ll have a tough time scrubbing it off.

 

Keep a close watch on it and skim off the top layer every time it comes up.. will look like white slime.

I started out with 2 cups of milk because I needed one cup of evaporated milk. I continued reducing till I got my one cup.. just eyeball it and you can bout tell when you have reduced it half way. =)
