SUBMITTED BY Patricia Stover I only add about 1 TBSP of butter to my bowl of beans and I cook them in the pressure cooker w/o even soaking them for 11-14 min. I remove the ham hock, cut the ham off the bone and return to the pot. My beans are always thick. A tip if they’re not and you have the time, put them in the refrigerator overnight and that will thicken them up or just boil them on top of the stove until the thickness you desire. I have heard of the techique of mashing some of the beans for thickness. MUST have cornbread w/ my beans. Also, I like fried potatoes or mac and cheese. Like onions but I can’t have them.
