OLD TIME MARSHMALLOWS

(Note: 10 x sugar in this recipe is referring to Confectionary or what is known as Powdered Sugar)

2 Envelopes Knox Gelatine

1/2 c cold water

1/2 tsp salt

2 cups sugar

1 tsp. vanilla

3/4 c. boiling water

Boil Sugar and water together until a thread forms when syrup drops from spoon.

Remove from heat.

Soften gelatine in cold water.

Add to your hot syrup and stir until dissolved.

Let stand until partly cool; then add salt and flavoring.

Beat until mixture becomes thick, fluffy and soft.

Pour into pan about 8×4 inches, thickly covered with 10 x sugar.

Have the mixture 1 inch in depth. Let stand in refrigerator until thoroughly chilled.

With a sharp wet knife, loosen around edges of pan. Turn out on a board, lightly floured with 10x sugar.

Cut into squares and roll in 10x sugar or chopped nuts or coconut.
