HOMEMADE CHOCOLATE CAKE

2/3 cup butter, softened

1-2/3 cups sugar

3 eggs

2 cups all-purpose flour

2/3 cup baking cocoa

1-1/4 teaspoons baking soda

1 teaspoon salt

1-1/3 cups milk

For frosting

1/2 cup softened butter

8 ounces room temperature cream cheese

2 teaspoons vanilla extract

4 cups powdered sugar

Directions

  1. In a bowl, cream butter and sugar until fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Combine flour, cocoa, baking soda and salt in separate bowl
  4. Add dry ingredients to creamed mixture alternately with milk a little at a time beating until smooth after each addition
  5. Pour batter into a greased and floured 13-in. x 9-in. pan.
  6. Bake at 350° for 25 minutes or until cake tests done.
  7. Cool on a wire rack.
  8. When cake is cool, dust with confectioners’ sugar or frost with your favorite frosting

Cream Cheese Frosting

  1. beat softened butter and cream cheese until well blended
  2. add powdered sugar and vanilla (add cocoa if you want chocolate cream cheese icing)
  3. beat until creamy, add milk if needs thinned

Yield: 12-15 servings.
