Here is a great recipe if you have some apples, raisins and walnuts to use up. It’s a gooey yummy apple cake that I got from a Mennonite cookbook while on vacation in PA. I’ve made a few recipes from this cookbook so fa and this one is my favorite…a keeper for sure, and soooo easy to make! A beginner baker should be able to make this one. It may be similier to some other apple cakes I’ve seen on here before, not sure.

APPLE PUDDING CAKE

Ingredients:

2 and 1/2 cups peeled chopped apples

1 and 1/2 cups flour

1 cup sugar

1 teaspoon soda

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup butter, melted

3/4 cup milk

3/4 cup raisins

3/4 cup pecans or walnuts (optional)

1 and 1/2 cups brown sugar

2  Tablespoons butter

1 and 1/2 cup water

Directions:

Combine all but the last 3 ingredients.

Pour into a 13 x 9 pan.

Bring brown sugar, butter and water to a boil.

Carefully pour over batter.

Bake at 350 F for approximately 40 minutes.

Good plain or with whipped cream, milk or ice-cream.
