Ok Guys THIS is where it’s at!!!!! My sissy in law Melanie Vance Ellisonbrought this dip to our Family New Years Christmas Bash and let me tell ya.. it STOLE THE NIGHT!!!!!!!!! Not even kidding!
I told her give me the recipe or die… hahahaha

“Jalapeno Popper Dip”

 


8 slices of bacon, cooked and diced
2 8 oz. packages of cream cheese, softened
1 cup mayonnaise
4 fresh jalapeno peppers, seeded and minced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/4 cup green onion, diced
1 cup Ritz cracker crumbs
1/2 cup Parmesan cheese, grated
1/4 cup butter, melted

Preheat oven to 350 degrees. In a large bowl, combine bacon, cream cheese, mayonnaise, jalapenos, green onions, cheddar cheese and mozzerella cheese. Stir until combined, and place in a casserole dish. Spread mixture evenly. In a small bowl, combine cracker crumbs, butter and Parmesan cheese. Mix well and sprinkle evenly over the top of the dip. Bake 20 to 30 minutes until golden brown and bubbly. Serve with Ritz crackers, tortilla chips or toasted bread.

Melanie Vance Ellison also left this tip for us….. I hope you all enjoy  it! Forgot to tell you if you have leftovers, it’s great mixed with pasta, like a jalapeno popper mac and cheese…I made it that way after the Super Bowl when I had a bunch left and it was yummy!
