Grandma Effie’s OLD FASHIONED STACK CAKE

Recipe is best with home spiced apple butter or cinnamon canned chinky apple sauce. You can mix them if desire
Also this cake needs to be refrigerated and “set up”
It tasted much better the longer it sits than fresh in the opinion of most as the texture changes as it melds


made with applesauce OR spiced  apple butter

1/2 c shortening

2 tsp. Baking powder
1/2 c sugar

1/2 tsp soda
1/3 c sorghum molasses

1/2 tsp salt
1/2 c buttermilk

1 tsp ginger
1 beaten egg

1 tsp vanilla
3-1/2 c flour

Cream shortening, with molasses, add beaten egg. Mix all dry ingredients and add with milk. Beat to a stiff dough. Roll out to thick ness of pie dough. Cut out circles with a scalloped pie pan. Place rounds of dough on cookie sheet and bake 12 to 15 min. put together with sweet well flavored applesauce OR with homemade spiced apple butter

makes about 9 layers. Let set a few hours before serving.  Some folks let it set in the fridge for a day or two, so the apples could soak into the cake layers for moist and maximum flavor.

Below is MY VERSION of Grandma Effie’s Stack Cake.. The above was ok but a little bland for my taste.. so I added more sugar this time  around about 3/4 cup total, and I added nutmeg and cinnamon to the batter as well as the ginger that was already included in the original recipe.. I also added a little more vanilla.

This time around I made my layers a tiny bit thicker .. sort of like gingerbread.. and that is actually what it reminds me of in smell and taste.  I also made  TWO batches of the batter, since I was making my rounds a bit thicker.. AND I decided to use both apple butter and chunky cinn apple sauce for texture and maximum taste

SERENA’S VERSION


Step by step photos of me making the stack cake..

1/2 cup lard and  1/3 c molasses

mix together and add 1 beaten egg

Mix all your dry ingredients together

3 1/2 cups Flour, 3/4 c Sugar, 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp ginger

1/2 tsp salt, tsp baking soda

mix well and add 1/2 cup butter milk alternately with the flour to egg mixture

\will make a thick batter

now you roll out thin on floured board the size of cake rounds… I made mine a little thicker than grandma

use pizza cutter to cut easily

place two rounds on large sheet

and bake at 350 12 minutes


Another way you could do this is simply spray the bottom of your rounds and pat the dough in the bottom and bake

either way you want to do it

I also made two batches of batter so I could stack mine up good since I was making mine thicker

I started stacking right away..

 

I used my thick spiced apple butter and halfway through decided to add some chunky cinn applesauce for texture

Refrigerate
Let set
Taste gets Better the longer it sets
