Date Nut Cookies
2 1/4 c dates, chopped
1c sugar
1 c water
1c. chopped walnuts
cook together until thick , about 10 to 15 mins. Let cool , add 1 c. nuts
dough: 1 c shortening
2 c brown sugar
3 eggs, well beaten
4 c sifted flour
1/2 tsp salt
1/2 tsp baking soda
Mix all ingredients together, take part of the dough roll out and spread filling on then roll up like a jelly roll. (repeat with other dough half) Refrigerate. Slice then bake @400 for 10 to 12 mins. ( you can make it one huge roll instead of two mom splits it because it fits better in the fridge, you can half both parts of the recipe to make one roll, and we refrigerate it over night then cook the next day) These cookies are super super yummy my favorite!!
