4 large whole chicken breasts

split skinned, boned

 

1/2 cup butter softened

1 clove garlic crushed

2 tbsp chopped parsley

1 tsp thyme or marjoram

2 eggs beaten

1 cup fine bread crumbs

salt

pepper

Pound chicken breasts thin between plastic bags. Keeping the smooth side of breast down. Mix next 4 ingredients and shape into elongated oval pieces and freeze.

Wrap chicken completely around frozen butter and dip each chicken piece into flour. next dip into eggs

and finally into bread crumbs.

Fry in hot oil 375 for 10-12 minutes. or bake at 350 for 45 minutes.. OR brown then bake rest of way..  drain on paper towels salt after cooking.. chicken will keep in a 200 F oven if placed uncovered on metal tray till served. Serves about 8
