CHERRY MERINGUE CAKE

1 pkg yellow cake mix

1 -1lb. can of cherry pie filling

 

Prepare and bake the cake mix according to package directions for two 8 inch layers. Put cake layers together with a thin layer of cherry pie filling. Place on cookie sheet. Frost sides of cake with meringue allowing meringue to extend 1/2 inch above edge of cake .. bake in gas oven at 400 degrees 6 to 8 minutes or broil in Electric stove  until meringue is lightly browned. Spoon some of the remaining cherry sauce on top of cake.

Confectionary Sugar Meringue

3 large egg whites

1/4 tsp cream of tarter

1/8 tsp salt

1/2 cup confectionars sugar

1/2 tsp vanilla extract

have egg whites at room temp

Beat egg whites with cream of tarter and salt in small bowl till soft p;ears form. add sugar slowly beating well after each addtion

Add vanilla extract. continue beating till meringue stands in stiff peaks. But it should not be dry.
