so I have tried and tried freezing zucchini shredded and each time I was not satisfied.. the zucchini was a big clump because of all the moisture in the zucchini..… it was never suitable enough for baking my breads after freezing and thawing.. trying a new method today since i have plenty of zucchini to experiment with.. will let you all know if it turns out well in a few weeks when I thaw a bag to try ..

  • I had always shredded small.. so this time I am doing it different.. it is sort of an experiment we shall see if it works. I always have frozen by apples and blueberries ect.. on a cookie sheet before I put them in the bags so they wouldn’t clump..maybe I can get close to the same effect if I do it with my shredded zucchini only with a few changes..

Ok this time I am shredding different.. I am using the biggest shred I can on my food processor.. laying them out onto a cookie sheet

okay into the freezer to firm up, I did lay a piece of parchment paper over top before going into the freezer to help with burn .. course it won’t be in there long enough to really worry about it but ..

okay now I am going to label a large gallon bag with what it is, and how many cups are in my smaller bags..

I put 2 cups into each small bag and then get all air out and put those into my large gallon bag.. carefully get all air out of bag and zip up and lay flat on sheet.  and freeze .. once frozen flat take out sheet and stack neatly
