I baked my sweet potatoes (I sprayed them w/ cooking spray), put them on an foil lined baking sheet (open) and baked at 350 degrees for about an hr on speed bake. I watched them to make sure they didn’t burn on top and placed a sheet of alum. foil over them after about 50 min. I picked out potatoes of similiar size when I bought them but 1 of them I had to bake another 10 min. Last night, I just cut 1 in half and ate it w/ butter like a regular baked potato.

I have 2 left; not sure what I’ll do w/ them today; there’s a lot of possibilites. I love sweet potatoes and they are really good for you.
