Sausage And Potatoes

Make’s 4 to 5 serving’s

2 medium carrots, peeled and cut into 1-inch chuncks

4 to 6 medium red or all-purpose potatoes, peeled if desired, cut into 1- inch chunks

Salt and pepper to taste

1 pound smoked sausage, sliced into bite-size rounds

2 large onions sliced

2 tablespoons butter

1 teaspoon paprika or smoked paprika or to taste

Place carrots and potatoes in a pot and cover with water.

Add about 1 tablespoon salt and bring to a boil.

reduce heat and simmer until potatoes are almost but not quite tender about 5 minutes.

Meanwhile, place sausage onion and butter in a 12 inch skillet over medium heat.

Stirring until onions are slightly softened about 5 minutes.

Drain the potatoes and carrots and add them to the skillet.

Add paprika and salt and pepper to taste.

Stirring gently until potatoes finish cooking and all of the flavors blend, 2 to 3 minutes.

( This is a great meal but the carrots are a little crunchy. So if you don’t like them crunchy you will have to cook the carrots a little longer before adding the potatoes.)
