QUESTION POSTED BY Serena Adkins Ellison on TRIED AND TRUE RECIPES on FACEBOOK
My baby brother Kelly is doing a biggest loser contest at his work, it lasts for two months and the winner gets 530.00 bucks… so his whole family is on a super duper diet… my problem is he doesn’t want a traditional birthday cake.. his birthday is the 16th… does anyone have a WONDERFUL tasting cake or dessert we can do for this birthday?
    • Tabitha Atkins what about angel food cake….take berries/water/splenda & make a syrup n pour all over the angel food cake. My friend done this last weekend & said it was good

    • Larry Wallace how about a humming bird cake? Its a spongue cake, and the icing is just the lite or sugar free whipped topping mixed with pineapple tidbits, mandarine oranges, and some crushed almonds! Its delicious and very few calories per serving! its one of my “diabetic desert” recipes!

what about a different dessert all together? Maybe some type of fruit salad or something. You are a great cook, you will come up with something.

Serena Adkins Ellison I made my friend a cake that was not only really pretty but very low calorie and tasted AWESOME!!! You get a devil’s food cake and mix it with diet cherry soda(1 can). You spray your cake pans with pam, cook the recommended amount. Once cake is cooled you put the icing. The icing I was was fresh raspberries mixed with fat free/sugarfree cool whip. Then I decorated it with fresh rasperries and sugarfree chocolate syrup. It was gorgeous and everyone loved it. If you are on weight watchers it is under 2 points a slice. Make sure to cut it into 12 slices though.

hats off to your brother and his family. Make a sponge cake, then top it with low fat whipped cream and low fat pudding mix, mixed together, top with some fresh strawberries.

Maybe a Chocolate Angel Food Cake with a light dusting of confectioner sugar, or drizzled with a very light orange glaze. You can use a stencil or a doilie and lay it on top the cake, then sprinkle the confectioner sugar, it will make a really pretty pattern on top the chocolate angel food cake. Then garnish with fresh fruit. Angel food cake comes in so many flavors, you could do orange or lemon also, but the confectioner sugar looks best on chocolate.

Angel food cake with strawberry icing is also very good

Slice an Angel Food Cake in half, spread any flavor of all fruit in between layers, then top with low fat whipped topping and garnish with fruit or mix the all fruit with the whipped topping.
