This recipe is very tasty and very simple.. the main thing is just getting them tender all the way through..


you can do them one of two ways.. you can do them like I have (whole) which takes longer to roast in oven..or if your not in a hurry you can after you slice them down the middle, take a ice cream scoop and scoop out some of the flesh, leaving sides (sort of like a boat)  chop up  the flesh with knife and replace the flesh back into the skins THEN put on your toppings so you won’t have to cook as long..

I took mine this time and just sliced in half, rubbed olive oil on them, peppered them salted them, used italian seasoning, and some extra basil. Then brushed them with Italian Dressing. sprinkle with parmesan cheese put in oven at 400 degrees for 40 minutes (25 if other way) then towards the end of cooking when I checked for tenderness.. I took it out and sprinkled parmesan cheese, careful to not get any on cookie sheet… then put back in oven till melted.. they go great with pasta
