I have a formula more than a recipe.
1medium sweet potato
1\2 cup of sugar
1 tablespoon of butter
1 teaspoon of flour
Dash of salt
1\2 teaspoon of nutmeg
1 egg
1\4 can of evaporated milk
1\4 teaspoon of baking powder
I bake my potatoes in the oven at 375 degrees uncovered until fork tender.
Peel potatoes while warm and add to a large bowl. Add the rest of the items and beat until smooth. Add filling to prepared unbaked pie crust. Bake at 325 degrees until lightly browned on top usually 45 minutes. Each potato makes one pie so if you want t 4 pies multiply every item by 4. I usually!my make 6. Filling freezes very well. I make enough at Thanksgiving time to last through Easter. You can freeze in pie crust or just freeze filling And unthaw filling then add to crust and bake according to above instructions. Enjoy
