Boil together 3 minutes

1 cup brown sugar

one cup water

1/3 cup veg shortening

one cup seeded raisins

1/2 tsp nutmeg

1 tsp cinnamon


Take off heat and cool down.

Add 2 cups sifted flour,

with 1/2 tsp baking powder

1/2 tsp salt

1/2 tsp baking soda

Mix batter and pour into a prepared square pan

Bake at 35-40 minutes in 300 degree oven (last seven minutes I put it on 350)

Toffee Icing

2 cups brown sugar

1/2 cup water

1 tbsp corn syrup

let come to a boil

Stir so don’t burn…cook till forms soft ball stage in cold water take off heat


Beat a egg white .

Add  egg white to mixture and beat. Add Splash Vanilla

Now add Tab or Two of Butter and beat to thin out..

Take hot cake out of oven and invert onto plate

Pour your Toffee icing over top

cut and eat with cold cream, as is very very rich
