Dinner was scrumptious. Israeli couscous, broccoli rabe, roasted okra and baked turkey tenderloin.

Turkey tenderloin
Ingredients:
1 pound turkey tenderloins
½ teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon cayenne pepper
¼ teaspoon fresh cracked black pepper
1 teaspoon salt or to taste
1 teaspoon olive oil
1 teaspoon parsley flakes
½ teaspoon oregano 
1 teaspoon paprika 
2 teaspoons red wine vinegar 
2 cups water

Directions:
Marinate turkey in above and let sit in the refrigerator for 30 minutes. You want to use a skillet with a lid and add all of the above ingredients and bring to a boil. Once it boils reduce the heat to a low simmer and cook covered for 25 minute, flipping half way. Remove cover and continue to cook on medium heat until water is absorbed and tenderloins are browned on both sides. 

Israeli Couscous

Ingredients
1 cup Israeli couscous 
½ small onions finely minced
1 garlic clove minced 
1 small carrot finely minced
2 cups Chicken stock 
1 teaspoon olive oil
1 teaspoon salt
½ teaspoon fresh cracked pepper
1/8 teaspoon red pepper flakes

Directions:
In a pot add olive oil, onion and carrot and sauté until tender. Add chicken stock and bring to a boil, add seasonings and couscous, stir and bring to a boil again then cover and reduce heat to a low simmer. Let couscous cook for 10 minutes then turn off heat and let it sit for another 5 minutes. Fluff with a fork and serve.

Broccoli Rabe

Ingredients
I bunch of Broccoli Rabe, also known as rapini or 
1 tablespoon olive oil
2 garlic cloves minced super fine or smashed
1/8 teaspoon red pepper flakes
½ teaspoon salt or to taste
½ lemon 

Directions:
Bring a pot of water to a hard boil, and then add the broccoli rabe cooks for 2 minutes or until the stalks are tender. Remove and plunge immediately into an ice bath ( a bowl full of ice and water)
Drain the broccoli rabe on paper towels. Heat up a skillet with oil, garlic and seasoning, add broccoli rabe and cook for 2 minutes. Remove the broccoli rabe from heat and squeeze ½ a lemon onto it. Serve immediately.

Okra 

Ingredients
1 pound okra
½ teaspoon salt or to taste
¼ teaspoon fresh cracked pepper 
½ teaspoon garlic powder
1 tablespoon olive oil

Directions:
Trim okra at the base to remove most of the fibrous end. Toss in olive oil and seasoning and spread onto a baking sheet. Bake in a preheated 425 degree oven for 20-25 minutes. Stir okra from time to time
