Use 2-3 eggs per turnover

and a ramp or two cleaned and minced up using the bulb

Add salt pepper, a pinch of parsley flakes, basil, and some crushed red pepper and a drop of milk







using fork, whip it until well blended














pour a little oil in your pan and using a paper towel wipe it thin..







Pour your mixture into your hot pan







and using fork poke center and around the egg so that the egg starts to cook through..







Flip egg once.. (if making an omelet you would not flip but this is thicker than an omelet)

Now add  your filling.. I am putting white american cheese in the middle and and two slices of yellow american cheese on the ends.. topped with slices of bologna, you can use whatever cheese and meats you desire..







Next I add some chunky hot salsa







Now a dollop of Sour Cream








and “TURN her OVER” Hence the term “Egg Turnover”







Enjoy and serve while hot…

VERY Filling dish needs no sides .. as it is much thicker than an omelet.
