Simple Chicken and Rice Soup 

3 c. boiled shredded chicken breast
2 qt. chicken broth
1 tbs. olive oil

1 c. water
1 tbs. butter
2 stalks celery sliced thin
2 med. carrots slice thin
1 med. Onion diced
1 bay leaf
1 section garlic minced
1/8 tsp thyme
1 c. long white grain rice or instant
Salt and pepper to taste 

Using a lg. pot add oil then garlic and celery, onions and carrots then cook for 6 min on med heat. Now add broth and water bring to a boil. Reduce heat add chicken then rice and bay leaf, thyme. Simmer for 30 min or until rice is tender. Enjoy.
