SERENA’S ZUCCHINI BREAD PUDDING (MOCK APPLE BREAD PUDDING)

Zucchini Bread Pudding

4 cups whole milk (or half & half)

1/4 cup butter (1 stick)

2 cup brown sugar (light or dark, depending on taste preference)

1 cup white sugar

6 whole eggs

1 Tbsp cinnamon

1/2 teaspoon ground nutmeg

2 tsp vanilla extract

Two – 8 cup  stale yeast bread, torn into cube pieces

1/2 c cinn and sugar mixture

handful or 1/3 cup raisins

corn starch  and water

1 medium sized zucchini

3 Tbsp lemon juice

Directions:

you will need a medium sized zucchini

You will cut into strips and using a melon baller take out seeds but try and leave as much of the meat as possible.

now you will peel off outer skin of zucchini and you will slice very thin apple like pieces and put into a bowl

Now cut up medium cubes of stale yeast bread (can use what you have on hand as well, I used hot dog buns and sandwich bread today)

 

Place 1st batch of cubed bread onto cookie sheet.. sprinkle large amount of cinn and sugar mixture over bread..

 

 

toast under BROIL in oven, watch closely as not to burn..

 

then toast second batch of (8 cups) cubed bread – keep them separated

Put your zucchini in a pot and add a little water and put on boil, make sure your zucchini gets nice and tender then take off heat and drain well.

after drained well in colander put in bowl and add 3 Tbsp lemon Juice

to them and add 2 cups brown sugar mix well


add in 2 Tbsp self rising flour

and 2 Tbsp Cream of Tarter

mix

spray dish with bakers Joy or butter it well

place  one of the batches of toasted bread cubes in large 9×13 glass or heavy casserole dish (mine is coated cast iron)

throw in a handful of raisins if desire

place zucchini mixture over top of the first layer of bread

now take your second 8 cup toasted bread cubes and layer over top of the zucchini

 

Pour milk in pot with butter put onto stove can put on simmer at this point to let butter start to melt but wait to turn up heat….

 

Combine sugar, eggs, cinnamon, nutmeg, beat with a fork

take a cup and put in about 3 Tbsp of cornstarch and mix a tiny bit of  water in with fork just till liquid then pour into the egg mixture

 

turn up heat on milk and let come to a soft boil…  slowly pour in sugar mixture

.

stir continuously..turning down heat..should thicken nicely

 

CAREFUL NOT TO SCORCH

now take off heat and add in two tsp vanilla

Pour over top of the bread

 

. Bake at 350 degrees F for about 35  minutes or until set.

take out and pour your sauce over top

let stand ten minutes

 

Serve warm. with butter pecan ice cream and Sauce

 

 

Bread Pudding Sauce

1 Cup sugar

1/2 cup buttermilk

1/4 cup butter

1/2 tsp soda

2 tsp vanilla

add pecans and some of your raisins to topping..

boil 1 minute  and pour over warm bread pudding
