SERENA’S PENNE PASTA BOWL WITH BROCCOLI CHEESE AND GRILLED CHICKEN STRIPS

You will need:
2 chicken breasts grilled then cut into strips
1/3 cup Italian salad dressing
penne pasta
shredded Mozzarella
Shredded Parmesan
Grated Parmesan
Butter
Milk
2 large diced tomatoes
basil
3 garlic cloves
4  tablespoons olive oil
1/2 tsp lemon juice
shake of pepper
1/2 tsp balsamic vinegar or apple cider vinegar
1 tsp granulated sugar
mushrooms
broccoli
salt
  • First Marinate Chicken in Italian Dressing 30 minutes

  • cook  box of Penne Pasta in boiling water with salt and a tbsp oil to aldente`


  • Grill Chicken while pasta is boiling

and slice into strips. set aside.


make your Alfredo Sauce

Creamy Fettuccine Alfredo

8 ounces cream cheese, cubed
3/4 cup grated Parmesan cheese
1 clove garlic, minced
1/2 cup (1 stick)  butter or margarine
1/2 cup milk (regular milk)

dash of pepper

and a sprinkle of parsley flakes.. not too much

 

In large saucepan, melt butter and saute garlic until almost soft. DON’T BURN GARLIC

add parmesan cheese


add cream cheese, and milk. Stir over low heat with wire whisk  until smooth.

add a pinch of parsley and a touch of pepper and toss in Steamed Broccoli 


  • Take some mushrooms and  put in sauce pan over medium heat saute in  1/2 stick butter


  • Chop tomatoes, add olive oil  2 cloves minced Garlic and basil, with lemon juice, vinegar, sugar and shake of pepper, and a tbsp of shredded parmesan cheese to make bruschetta. Set aside.


  • Drain water off Penne , put in metal bowl to retain heat.. sprinkle some shredded parmesan cheese and some shredded Mozzarella cheese over warm pasta, toss heat of pasta will melt cheese. Sprinkle with salt and pepper


  • Add Alfredo, Broccoli and Chicken to Penne Pasta
fold in sauce


  • Take Mushrooms and toss in Penne as desired
Should be perfect but if too thick can thin out with a few tablespoons of regular milk


TIME TO SERVE


  • Put Bruschetta over slice of Italian or French Bread ,  if desire add some of the Bruschetta to your Penne, it is usually left out of the dish so each individual can add as much or as little as they desire to bread or Pasta
