SERENA’S HOMEMADE ROMA TOMATO PIZZA SAUCE


Okay so today feels like a great day for pizza …

First make your crust.. (I have the recipe posted for the one I am using today down below)

 

mold your crust into your pan.. I am making a thin crust today so I am using my great big pan.. if I wanted a thicker crust I would use my regular size deep dish pizza pan instead..


For the Sauce:

in Pot I added about a quart and a half or so of my freshly blanched and peeled Roma Tomatoes that I had left out after blanching,  when canning last night… notice i also added a small amount of the juice from tomato

let boil

then add pepper and salt then add a little sugar about 1/4  cup, a good amount of parsley, a scatter of red pepper flakes and basil and two cloves of minced garlic about 1/4 cup parmesan cheese

let it cook keep stirring and turn down heat to simmer  you want it thick (taste and add spices to your liking)

 

Assembly:

brush edges of dough with veg oil or olive oil … add parmesan cheese, pepper and basil lightly around the edges..

 

Next take your Roma Sauce and spread on pizza all the way up to edge of your seasoned crust

Now load up how you want.. this one I am making today I am making like my hubby likes a lot of pepperoni.. I layer pepperoni all over the sauce then add a whole bag of shredded mozzarella cheese

add a few more pepperoni to top for color

and sprinkle with parsley flakes and parmesan cheese ..

bake in 400 degree oven for 15 minutes then broil at end to make top nice and browned like the parlor pizzas

Recipe for my EASY FAST Pizza Crust

1 Tbsp  dry yeast

1 cup warm water
1 tsp. sugar
1 tsp. salt
2 Tbsp. vegetable oil
2 1/2 cups Self Rising flour

some cornmeal for bottom of crust

Dissolve the yeast in the water. Add the rest of the ingredients in and mix. put in greased bowl cover for 5 minutes

come back and put out onto lightly floured board knead till dough is smooth
