SERENA’S BLUEBERRY  BANANA CAKE WITH CREAM CHEESE FROSTING

 

Cake Ingredients

4  bananas, mashed, ripe
2 teaspoons lemon juice
3 cups all purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 cup  butter, softened
2 1/2 cups sugar
3 large eggs
2 teaspoons vanilla
1 1/2 cups buttermilk

1 can blueberry pie filling with pinch white granulated sugar

Frosting  Ingredients
1/2 cup butter, softened
1 (8 ounce) packages cream cheese, softened
1 teaspoon vanilla
3 1/2 cups confectionary sugar
chopped walnuts
    Directions
Preheat oven to 350 degrees
grease  9 x 13 pan.
mix mashed banana with the lemon juice; set aside. use only RIPE bananas.. the little brown spots mean these nanners are SWEET not rotten
In a medium bowl, mix flour, baking soda and salt, set aside.  you will need 3 eggs and some buttermilk

In mixing bowl,  cream  butter and sugar until light and fluffy.
stir in 2 tsp vanilla.

Add eggs to your buttermilk, don’t beat just add whole
Beat in the flour mixture alternately with the buttermilk and eggs

Stir in bananas last
Pour your large can of blueberry pie filling into your 9×13 cake pan spread out evenly and sprinkle lightly with granulated sugar
Pour batter over top

and bake in preheated oven for 50  minutes or until toothpick inserted in center comes out clean do not over bake
let cool  (If you can) and add cream cheese frosting to top
For the frosting, cream the butter and cream cheese until smooth.
Beat in 1 teaspoon vanilla.Add confectionary sugar and beat on low speed until combined, then on high speed until frosting is smooth.
Spread on cooled cake.Sprinkle chopped walnuts  or pecans over top of the frosting, if desire

Okay so I couldn’t let mine cool … it smelled so good I just HAD to have a slice so I cut it and put my icing on that slice.. LOL Cover leftovers with lid and store in fridge …. good cold too
