SCALLOPED HAMBURGER HASH WITH CHEESE SAUCE

(you can make as much or as little as you like, no real recipe just a method Today I am using 4 large potatoes and 1 1/2 lbs ground chuck and it was plenty)

4-5 large potatoes peeled and sliced in medium thickness across to make rounds. Try to get them around the same thickness so they are all done at the same time as they cook.

Boil potatoes in salted water till tender, not falling apart.

Brown 1 1/2 -2 lbs of ground chuck with a couple tbsps of chopped onion. Season with salt and Pepper.

Make your cheese sauce in a sauce pan. Using a egg size of butter, 1 cap full of grated parmesan cheese (about 1/3 cup) 1 cup milk, and some sliced Velveeta cheese .. stir it on medium heat and add a little pepper and parsley flakes

Preheat oven to 350 degrees

carefully lift out some potatoes from the water with a slotted spoon without breaking them and place them in the dish, sort of overlapping one another until they are all filling the dish. lightly salt and pepper the potatoes and add a little parsley flakes.

Next spoon over your cooked hamburger meat.

Now take your melted cheese sauce, and using a rubber spatula, guide the cheese over top of the dish, evenly.

Take some Velveeta and place some randomly around the dish and finish it off with any kind of shredded cheese you have on hand.. it just takes a handful or so, I had a little bit of Fiesta Blend cheese so I tossed it over top..

Put into the oven and bake at 350 for 10-15 minutes. Take out and let it rest. Serve hot with any side you choose… today we just had some sweet corn and bread with it.. but steamed broccoli is also great paired with this.
