Almond Poppyseed Cake.
3 cups flour
2-1/2 cups sugar
1-1/2 teaspoons salt
1-1/2 teaspoons baking powder
1-1/2 Tablespoons poppyseeds
1-1/2 cups milk
1 cup vegetable oil
3 large eggs
1-1/2 teaspoons vanilla
1-1/2 teaspoons almond extract
If I have it, I add the zest of 1 orange
Glaze
3/4 cup sugar
1/4 cup orange juice
1/2 teaspoon vanilla
1/2 teaspoon almond extract
2 Tablespoons butter, melted
Oven 350, grease 2 loaf pans. Mix all ingredients well for cake. Bake 1 hour, 5 minutes.
Combine glaze ingredients and pour over top as soon as it comes out of the oven. Let it sit a couple hours to cool, run a knife around the edges and remove from pan.
