PINEAPPLE COCONUT PIE 

1stick butter, melted
1½ cups sugar
1cup drained, crushed pineapple
1Tblsp vinegar
1cup shredded coconut
3eggs, slightly beaten
1tsp vanilla
9 inch unbaked pie shell
Mix all ingredients and pour into unbaked pie shell.
Bake @ 300 degrees for 1 hr.

This recipe was made from Patricia Stover post several days ago. It was very good and not overly sweet- just right
