This is one of the most popular candies made during the holidays. This recipe was given to me from a close friend 28 years ago. Recently, I was curious to check out other recipes and found at least 40 recipes with many variations, and not one was identical! There are many variations to this candy and so many things can be added to it. The one I make has Karo light corn syrup in it, and I think it sets it apart from all others. Give it a try!

Peanut Butter Balls 

Ingredients: 16 oz. powdered sugar
1/4 cup Karo light corn syrup
2/3 cups butter softened at room tenperature
32 oz. peanut butter
12-18 oz. semi-sweet chocolate chips (I also mix with milk chocolate chips sometimes)

Mix together peanut butter and Karo syrup. Add butter and mix well to a creamy consistency. Gradually add sifted powdered sugar. I prefer sifting it although you do not have to. Mix thoroughly, kneading with clean hands. Form into one inch balls and place on cookie sheet covered with wax paper. Freeze to harden at least 2 hours or longer. Melt chocolate chips however you want to. Some use a double bolier, others use a microwaveable glass bowl. If you use the microwave, have a few drops of vegetable oil or melted Crisco close by to use if chocolate thickens too soon. Dip balls in chocolate any way you want to. Some use a fork, some use toothpicks, I use a teaspoon. Make the balls smooth, or swirl on top, or sprinkle with nuts or anything you like. Enjoy!
