3/4 stick  butter

3/4 cup white sugar

zest of 1 orange

3 eggs,separated

40 ml  freshly squeezed orange juice

1 cup self rising flour

1 teaspoon orange essence

shredded  coconut


1.In a mixing bowl combine butter and sugar.

2.Mix until light and fluffy.

3.Add the orange zest and the egg yolks and beat again.

4.Gently stir in orange juice,alternating with spoonfuls of sifted flour.

5.Once combined,add the orange essence and coconut.

6.In another mixing bowl,whisk the egg whites until they form soft peaks and then carefully fold into the cake mixture.

7.Once combined,place mixture in a lined cake tin.

8. Preheat oven to 350 degrees

9.Bake 30 minutes or till done

10.Remove and spread with glaze made of confectionary sugar and a tad of water or milk
