Okay I was feeling creative when I made this recipe up  today.. and I THOUGHT it would be wonderful.. it looked good.. smelled good but it was just too dry for my taste.. my mom thought it was great however.. she said she would like it like a coffee cake with her morning coffee.. but I ended up pouring milk over top to and in some holes to add moisture..

I had originally put 2 cups of Oats in this cake.. the batter tasted DELISH.. but I think the oats expanded and my cook time needed to be cut down from an hour to 45-50 minutes. SO… next try may be the one.. it is still a work in progress.. will update on the next trial run.

 

SERENA’S OATMEAL SURPRISE APPLE POUND CAKE

2 1/2 c. all purpose flour
1/2 c. self-rising flour
2 c. white granulated  sugar
1 tsp. salt
1 tsp. vanilla
1 c. Crisco
1   c. milk
5-6 lg. eggs

1 cup of dry Quick Oats

Mix together (beat well)

pour some of the batter evenly  into buttered and floured bunt pan.

Next take some Apple Pie Filling (I have some homemade that I made and froze.. I am using.. I thawed it out because I will be making pies later … just spread your filling around on top of the batter but do not over do it. just  a ring will do.

Then take rest of the batter and pour over top of the apple filling.

Sprinkle cinnamon and sugar mixture overtop  and sprinkle a bit of brown sugar.

Put into the preheated oven

Bake at 350 degrees for 50 min or till done. all ovens vary in temp…

Invert onto plate

then quickly using another plate turn over again so the cake is sitting on the plate just like it did when it went in the oven.

YOu can now serve plain like this  or with caramel drizzled over or you can make an Oatmeal Rum Sauce to serve with it.

To make the Oatmeal Rum Sauce

add a palm full of brown sugar

about 2 tbsp cornstartch

1/2 tsp nutmeg

1/2 stick of butter to start with

put in sauce pan and stir with wooden spoon as butter melts and the paste is thick add 1 cup of milk

stir and add in another splash or so to thin it a bit.. stir well and add in another half stick of butter turn off heat add vanilla and tsp rum flavoring

pour in strips over cake (don’t cover whole cake) and the rest just drop in the center hole and when it is cut.. each slice will have a dab of the oatmeal.

 

Cut and enjoy with coffee or pour milk over top..
