Miniature Cheesecakes
When you just want them to know how much you love them! Here’s an easy little treat.

1 cup graham cracker crumbs
1/4 cup sugar
1/3 cup butter, melted
2 pkgs regular or light cream cheese, softened
1 can Sweetened Condensed Milk
2 eggs
8 oz white chocolate, melted

Fresh, ripe strawberries

Combine crumbs, sugar and butter; press equal portions firmly onto bottoms of 24 paper-lined muffin cups. Beat cream cheese until fluffy. Gradually add milk, eggs and white chocolate. Spoon equal amounts of mixture into prepared cups.
Bake in preheated 300 degree oven for 15-18 minutes. Cool thoroughly and chill for at least 4 hours.

Remove the stem and slice strawberries in half top to bottom to form little hearts and place on cheesecakes. Serve the mini cheesecakes in paper liners or peel off paper liners and garnish as desired.
