Dinner tonight! We like Mexican food.. I am not sure if I have posted this before, I can’t find it on here. It has been a while since I have made this….
I am making taco’s, and Mexican rice on the side. but it is great for tamales also. 

Mexican Pot Roast (great for taco’s or tamales)

– 1 tablespoon vegetable oil
– 1 clove garlic minced
– ½ onion finely chopped
– 2 ½ pounds boneless chuck roast, cut in to pieces
– 1 dash cayenne pepper
– 1 dash salt
– 1dash cumin powder
– 1 dash chili powder
– ½ can of beef broth
– 1 can green chilies 4 oz
– 2 jalapenos seeded and finely chopped

Heat oil in dutch oven, med heat.
Sauté onion, jalapenos, garlic
Add meat, stir until a little browned
Add green chilies, seasoning, and beef broth
Reduce heat to low, and simmer for 3 hours
Shred meat with fork

Patty Morrison Patricia Stover Although I used 2 jalapenos and a little of chili powder and cayenne pepper, it is not hot at all, just a good flavor
