My sis n law Melanie made this and brought it to our cookout yesterday… I must say I was skeptical at first… I heard the word DIET and I heard her say NO MAYO … and I was like… ohhhhhhhkay! BUT I tried it and it is DELISH…. even had seconds… goes to show there are some things we can MODIFY and still get great taste without so much of the fat.


Mustard Potato Salad

3 lbs. red skinned potatoes
3 T stone ground mustard
2 T extra virgin olive oil
2T seasoned rice vinegar
4 scallions, chopped
1 T fresh dill, chopped
1 tsp. sea salt
1/2 tsp. fresh cracked black pepper

Clean and cube potatoes. Boil potates about 15 minutes or until fork tender. In the mean time, whisk remaining ingredients in a large bowl until emulsified. Drain potatoes and return to hot pot, removed from heat, to allow remaining water to evaporate. (This will help dressing stick to potatoes.) Mix well, until all potatoes are coated. Serve warm or room temperature. Great for picnics and barbeques because ther’s no mayo to worry about! Enjoy!
