5-7 cups any color peppers. although red yellow and orange look the best. Dice them in a food blender and drain in a colander. Stir to remove all water. Add 6 of the hottest small peppers you can get, add 5 cups sugar and 1/2 cup brown vinegar and 1/2 cup of apple juice frozen concentrate, OR for a flavor twist, some white/pink wine, trust me, THIS IS GOOD. boil for about 5 min then add your sure jell or the Dutch gel. Boil for 2 minutes. Immediately put into canning jars and process in hot water bath for about 15 min.
