SERENA’S MADE FROM SCRATCH CREAM OF CHICKEN SOUP WITH WHITE RICE



1 stock pot

add a whole chicken

cover with water.

add 1/2 stalk of celery chopped with leaves

add 1 whole large onion diced

salt

3 chicken bullion cubes

pepper

1 1/2 tsp dried rosemary

let boil till the chicken is coming off bones easily..

turn down and using tongs take out bones and skin

in another pot add 1/2 cup butter let it melt over heat.

. stir in 3/4 cup all purpose flour..

 

stir will be thick paste

start adding a cup full at a time of the broth from the chicken..

add about three cups and stir well..

 

now add 1/2 tsp of poultry seasoning, and pepper. stir..

 

add more broth. at this point it is thick and creamy which is also VERY GOOD but I am adding more broth today.. do it how you please.. (watch your soup as you add you do not want it to be SUPER runny.. you want it to still have a creamy consistency.. so stop adding the broth when you feel it is getting too liquidy.. but add all the chicken…

NOW in another pot you should have made your rice.. (I add a little butter to mine optional) ..

once your rice is ready.. you may serve one of two ways.. you could add the rice to your soup pot or you can add the rice to your bowl and serve the soup OVER it like I am doing now…. that way you get more rice without it becoming gummy.. .. but do it however you please.  Enjoy
