LITTLE BUTTERCUPS

2 1/2 cups flour

1 cup sugar

1 Tablespoon Baking Powder

1 teaspoon salt

1/2 cup vegetable shortening

3/4 cup milk

1/4 cup Orange juice

1 tsp vanilla

2 eggs

 

ICING

1 box confectioners sugar

1 stick softened butter

1 Tbsp rum flavoring

2 Tbsp light cream

 

TOPPING

3 cups vanilla wafers (crushed)

1 cup crushed pecans

1 cup coconut shredded

 

DIRECTIONS

Sift dry ingredients and shortening milk orange juice and vanilla. Mix with mixer 3 minutes. Add eggs and beat 2 more minutes. Bake in small muffin tins for 20 minutes at 350 degrees

let cool

in large bowl mix ingredients for icing. Ice butter cups and roll in combined ingredients for Topping.
