ITALIAN BEEF STEW

Italian Beef Stew
1 London Broil (approx 1 1/2 lbs) cut up in cubes (I prefer a London Broil over already cut – much less fat)
1 Large can Crushed Tomatoes
2 to 3 Bouillon Cubes depending on how salty you like your food
2 to 3 potatoes
2 to 3 carrots
1 medium onion
1 small package fresh sliced mushrooms (optional)
1) Peel and cut the potatoes into bite size pieces and place at bottom of crock pot
2) Peel and cut the carrots into bite size pieces and place right above the carrots in crock pot
3) Cut up the onion (not too big-it really does not break down) and layer on top of carrots
4) Add all the cut up London Broil
5) Add Slices Mushrooms
6) Add whole can of crushed tomato
7) drop in Boullion Cubes
No extra water is needed, everything will steam.
Cook on High for 5 to 6 hours or Low for 8 to 9 hours
I serve over rice or egg noodles.
