    I am freezing most of it and will pull it out for Christmas so everyone else can eat it. For me, it is quite rich and something I would only eat on special occasions.

  • Serena Adkins Ellison What do you freeze your cheesecakes in? Plastic Cake Containers or do you use cardboard freezer boxes, or something else? curious… I freeze a lot of things but haven’t frozen a whole cheesecake yet..

  • Serena, I put my cheesecake into a deep heavy duty aluminum foil pan, the disposable kind, and sealed it with heavy duty aluminum foil. I tent it somewhat so it does not touch the top of the cake. Seal it around the edges real well. I buy several of those pans around Thanksgiving because of all the cooking we do and have some on hand for Christmas baking. As long as it is not stored longer than 4 weeks it should be fine.
