I made the best eggrolls this weekend when we had a lot of family visiting. I made over 60 and they were gone in minutes.
I used 3 packs of eggroll wrappers and I think there are 20 in them.

You just brown your hamburger meat a few lbs. then drain and put it in a big pot then put oil in your wok or pan and stir fry chopped onions, thinly sliced carrots,
I just buy the kind that is already cut up and cabbage but I just use cole slaw mix not the fine kind.
Salt and pepper while it is cooking and add it to the hamburger and mix it well and simmer over low heat add soy sauce to your liking.
Then just get your eggroll wrappers and lay one on a plate and use a brush with water around the edges so you will have a good seal and put some of the filling in the middle and fold the triangle over and bring the sides in and roll it. Then just put it in the deep fryer.
You may have to use tongs to hold it and turn it so both sides get brown.

my cousin made a big batch of them this year at the family reunion, she just used a deep skillet with oil, and turned them when browned!!!
