friends – this is my recipe for Goof Balls, an old family recipe.
Also sometimes called Russell Stover Candy or Almond Joy Candy
3 Cups powdered sugar
2 1/2 sticks butter
1 can Eagle Brand Milk (sweetened condensed milk)
5 Cups nuts – chopped fine (prefer pecans)
5 Cups Coconut (I use shredded coconut in the poly bag)
For coating I prefer chocolate discs, but if you want to use paraffin – then it takes 1/4 cake paraffin to 1–12 oz. bag chocolate chips.
Mix butter, sugar, milk, nuts & coconut well. I work with my hands & it becomes more moist as you work with it.
Chill well – at least 2 hours, then form into balls. Melt chocolate & dip balls in quickly.
Place on waxed paper to cool and set. For variety, use 1 small chocolate & 1 small butterscotch chips.
