GOLDEN SPONGE CAKE

1 c sugar

1/4 tsp salt

1 cup cake flour

5 egg yolks

1 1/2 tsp lemon juice

1/2 tsp grated lemon rind

5 egg whites

measure sugar, sift twice . sift flour. then measure and sift three times with salt.

beat egg yolks add lemon juice and rind slowly till thick.

beat egg whites till stiff. add in sugar gradually.

beat in first additions then fold in last ones. fold in egg yolks

gently fold in flour, a small amount at a time.

turn it into your uncreased tube pan.

bake at 325 one hour. remove from oven and invert pan and let stand till cool.
